French Toast is one of my favorite things to make for breakfast, or even dinner! My mom use to make Banana French Toast on special mornings before school for my brother and I. We were always excited to have Banana FUN French Toast! My favorite part is that it’s quick and easy (and yummy too!).
½ cup butter
½ cup packed dark brown sugar
2 tablespoons dark rum
3 whole eggs
2 egg yolks
½ cup milk
¼ cup whipping cream or half-and-half
1 teaspoon vanilla
3 tablespoons unsalted butter
6 slices thick-sliced bread
In a pan with lid, melt 1/2 cup butter over medium heat. Add brown sugar; beat with whisk until brown sugar melts into butter. Remove pan from heat. Beat in rum with whisk until smooth. Cover; set aside. (EASY!)
In a bowl, beat whole eggs and egg yolks with whisk until blended. Add milk, cream and vanilla; beat with whisk until blended.
In another pan melt 1 tablespoon of the unsalted butter over medium heat. Dip bread slices into egg mixture, turning to coat and place in pan. Cook for about 3 minutes on each side or until golden brown.
While French Toast is cooking, add sliced bananas to brown sugar-rum mixture. Cook over medium-low heat for about 2 minutes, or until bananas are softened.
For FUN add whip cream or chopped pecans for an added crunch!
So simple, so easy and so yummy! I just love breakfast!
